Brunch with Celery

Because there's only 11 days until I move out, I'm trying to spend as much time as I can with my best friends before we all move hundreds and thousands of miles away from each other (*sniff*).

Monday was brunch with Celery (aka Ellie). And LET ME TELL YOU it was the BEST BREAKFAST I'VE EVER HAD IN MY LIFE. I'm not kidding around here. Here's a picture of our adventure and of course, the recipes!! Things like this can't be kept secret folks.

Zucchini Pancakes

3/4 cup whole wheat flour

2 tsp baking powder

1/2 tsp salt

1 tsp vanilla

2 large eggs, separated

1 cup greek yogurt

2 tbsp brown sugar

1 tbsp honey

1 cup shredded zucchini

1. In a large bowl, whisk together the flour, baking soda, and salt.

2. In a separate bowl whisk together the egg yolks, greek yogurt, vanilla, brown sugar, and honey.

3. Add flour to the wet mixture, be careful not to over mix.

4. Beat egg whites until soft peaks form.

5. Fold egg whites into the rest of the mixture. Stir in zucchini, careful not to over mix.

6. Cook on a greased pan or griddle.

7. Fill yo belly

*For Dairy Free or Vegan options substitute greek yogurt for almond based yogurt.*

Acai Bowls

we didn't have a recipe for these before we made them, but here is what we put in them

Acai Packet (these ones were from Costco)

Frozen mixed berries

Banana

Almond milk

1/2 Avocado (optional)

Blend and top with granola, coconut, etc.
